Scrub the skins first, but yes. My mother liked to eat the skins. My hubby likes them peeled. Whatever you like.

sure, just as you can with the other kinds of potatoes. they say the skin has the vitamins and minerals. i make my mashed potatoes with 1 white and 1 sweet potato for every 2 people. no need to add anything (other than a little splash of milk maybe) but i do add some butter (not margarine) and a little brown sugar as well.

Yes bake them with the skins on just like a regualar potato and then peal and mash.

You can actually boil them whole and when they are done, just drain and pull the skin off. Works great. Mash them up and they are delicious. I sometimes bake them also and I wash them good and wrap them in tin foil and bake them until done. . .

Yes - just make sure to prick them with a fork so that steam can escape. Otherwise, you may end up with little yam bombs and a lot of yammy goo all over the inside of your oven.

If youe going to cut them up before you cook them I would peel them first. The skins on a sweet potato arent like the ones on a white potato. I like the skins on a white potato, but not a sweet potato. Also heres another fun food fact: you lose hardly any vitamins from peeling fruits and veggies whose skin is the same color as the flesh, such as sweet potatoes and carrots. Its veggies amp; fruits with different color skin and flesh that you lose vitamins from peeling like white potatoes and apples

I always cook them that way. You peel them after theyre cooked. Raw sweet potatoes are so difficult to peel.
