Having a Burnss supper in Austria and cant get hold of turnips here - what could I serve to go with it? At the moment Im thinking of making rumbledethumps and a salad - any better ideas? ~~~ sjkohn1981 ~~~

As a former chef and I did a number of Robbie Burns Night dinner, neeps are nice but any root veg is fine, even a nice beet side (boiled or roasted), carrots, we did creamed onions one time, you can do this with regular onions, just cut 6 or 8 into medium chunks cook them in chicken stock and seasonings, thicken with either a flour beuree manie or cornstarch slurry and add some milk or cream. Even creamed peas or carrots (done like the onions), someone said parsnips either cooked and mashed or roasted in the oven they become really sweet, if you choose a green veg, make it a mild one, spinach is fine and can be either just boiled and served with butter and a dash of vinegar, creamed or sauted. Brocolli or cabbage are fine to, the colchonan idea is nice to, just make sure it does not over shadow the main player in the meal the Haggis.

Well the old version of Haggis is with Tattys and Neeps. Tattys are mashed potatoes and neeps are mashed swede.

Whenever possible I like to leave the skin on my root vegetables as this adds to the colour and texture of the vegetables. The vegetables can be prepared the evening or morning before cooking them and stored in water in the refrigerator. Portions: 6-8 portions Preparation: 10-15 minutes Cooking: hours Ingredients Vegetables 1 large baking potato, washed, scrubbed and cut into 8 or more wedges (cut lengthwise) 1 large sweet potato, washed scrubbed and cut into 8 or more wedges (lengthwise) 1 medium-large turnip, washed , scrubbed and trimmed and cut into 8 or more wedges 8 small carrots, washed or scrubbed or 4 large carrots, cut in half or quarters lengthwise 2 tbsp extra virgin olive oil 2 tbsp walnut oil Spices 1 tbsp coriander powder 1 tbsp cumin powder 1 tbsp garlic powder 2 tsp celery salt freshly ground black pepper Method Root Vegetables: Wash and cut all the vegetables into wedges (if preparing in advance store in a bowl of water in the refrigerator). Dry the vegetables and place them in a large oven tray. Toss the vegetables with the olive oil and walnut oil. Add the spices and coat the vegetables well in them. To Cook: Place the vegetables in a preheated oven at 220C or place them in the oven with the roast turkey in the final hour and half of cooking. Check the vegetables after 30 minutes and turn them over and cook for a further 30 minutes. Check the vegetables if they are tendered golden brown cover them with foil and place them in a cool part of the oven if cooking with the turkey or serve them hot. If they are not ready return them to the oven and leave them to cook for a further 20-30 minutes until ready.

What are normally called turnips are in fact or to give them their right name "Brassica Rapa" have white flesh, and 20 chromosomes. Swedes "Brassica Napus Napobraccica" 38 chromosomes , called Swedes because they were believed to have originated in Sweden and taken to America by the Swedish immigrants, who called them "Rutabagga" from the Swedish rotobagge; =root ram .
